Kare-kare is a Philippine stew in Peanut Sauce. If you like Satay, then definetly you’ll love this dish. This is my version of kare-kare, easier, quicker but still delicious. The traditional way of cooking kare-kare may take a little bit longer because of meat used, usually ox tail and tripes which is usually takes time to cook, making sure that the meat is tender. This dish must always paired with “bagoong alamang” which is a sauteed shrimp paste BUT in this recipe, I didn’t use shrimp paste.
Why did I experimented on this recipe ? I love kare-kare but kids are not a real fan of shrimp paste. Also, I like using ingredients that we already have, it saves us money !
I’m using pork rashers but you can use any cut you like, and instead of boiling or steaming the veggies, I lightly roast in very little oil. I hope that you will enjoy this dish as we did.

Ingredients
500 g of Pork rashers (boneless pork ribs) or belly
1 tbsp of annatto seed powder
3 tbsp of rice flour
3 cloves of garlic
1 cup of peanut butter
2 tbsp oyster sauce
1 tbsp fish sauce (adjust to 1/2 depending on the saltiness of oyster sauce)
2 cups of water
pinch of ground pepper
2-3 tbsp oil
1 tbsp oil for veggies
Veggies
handful of okra, remove top and tips, the cut in half
2 eggplants – cut into rectangles
pumpkin
beans
bok choy – you may add this
Directions
- In a hot pan lightly toast the rice flour, then dissolve 1/4 of hot then water set aside.
- In the same pan, shallow fry pork until golden brown and cooked, set aside.
- Remove some oil from the pan and fry the garlic, burn don’t burn
- Add the rice flour, annatto seed powder, water, oyster sauce, fish sauce, ground pepper and peanut butter.
- bring to boil , keep stirring to avoid lumps
- Add some of the Pork, I left some pork added in serving.
- Cook until the sauce is thick, but keep stirring.
- Heat a skillet or pan add little oil and add pumpkin, then eggplant, okra , and beans and pan roast it.
- Serve with rice and enjoy !

When pan roasting, start with the veggies that will cook longer.
