Chicken adobo is a staple filipino food, and every region, every home in the Philippines have their own versions or have a secret recipe handed from generation to new generations. I remembered when we had an “Adobo Competion” with our friends, oh… the table was full of different versions of adobo, and believe me, all the adobos were so delicious, Yum !!!
Adobo is easy to cook in just one pan, but you have to balance the saltiness, sourness and sweetness of this dish. A one pot dish means less washing up – and that’s a plus on a weeknight dinner. Below is the basic recipe.

Serves : 4
Preparation Time : 5-10 mins
Cooking 30-40 mins
Ingredients
600 grams Chicken wings / drummets (you can use thigh, drumstick , breast)
30 mls Vinegar (I used Datu Puti Vinegar, otherwise use white vinegar)
50 mls Soy Sauce
4-5 Cloves garlic, crushed
1 tsp Black peppers
3 bay leaves
1 1/2 cup water
1 tsp brown Sugar
pinch of salt
Directions
- Combine the chicken vinegar, soy sauce, garlic, peppercorns and bay leaves in a pot.
- Bring the chicken in a boil over high heat and let it cook for 30 minutes or until chicken is cooked.
- Stirring occasionally.
- Garnish with spring onions or other herbs like coriander or parsley
Serve with steamed rice and enjoy !
Tip: You can remove the cooked chicken and reduce sauce to thicken , otherwise leave it for off the bone, pull apart chicken
